So, a few weeks ago I had a fan email me saying that they run a small Hot Sauce Company out of Florida (don’t judge, they’re cool) and asked if they could send a few samples and have me give em my honest opinion. Free Hot Sauce? Cool, sign me up. I got the stuff and opened one of the bottles and it’s clear that these folks take a lot of pride in it, thus, I had to try it on something worthy.
I’ve grew up in a Sports Bar during the Hot Wings craze of the 90s and there are a few ways to make em. Personally, I like to brine em, smoke em then finish em in the fryer. Since I don’t have a smoker or a fryer at home, I had to bake em in the oven which still yields terrific results, as long as you brine em first.
Brining is simple.
It’s a ratio of 1 cup of Salt to 1 Gallon (16 cups) of water. Boil about 4 cups of water and dissolve the salt then add the other 12 cups. Add the wings and let em soak for 12-24 hours. This causes a nice little chemical reaction that plumps up the meat and helps to compensate for the amount of moisture lost during the cooking process and keeps your wings juicy as fuck. If I’m cooking Poultry or Pork, I always brine it.
“So why don’t you list the time and temp?”
First off, your oven probably isn’t calibrated and is either running a few degrees hotter or colder than what it says. Second, wings range in size and this is going to determine how long you need to cook em for. If you have any doubt at all, just cut into the biggest wing and look to make sure since the last thing I want is for my fans to get sick.
